coconut mango protein balls

These balls are the perfect snack for packing with you on hikes, bike rides and road trips this summer.

I’d be lying if I said these protein balls were easy to make without a food processor. I’ve never been successful with making them without one. All of the ingredients mix so well with a high-quality processor (I always use the low setting). So with that said – ask your neighbour to borrow one if you don’t have one and get to it!

WET (prep first, see directions below)
2 Tbsp organic chia seeds + 3 Tbsp hot water
1 C or roughly 10 dates + soaked in hot boiling water
2 Tbsp organic virgin coconut oil 

DRY
1/2 C Walnuts
1/2 C Cashews
1 C Unsweetened shredded coconut
1/2 C Coconut flour 
1/2 C Vanilla protein powder
1 Tsp pink salt
1/2 C chopped unsweet dried mango
3 Tbsp Hemp hearts 

Servings: 20 1″ balls | Time: 15 mins | Equipment: food processor

Directions:

  1. Boil water in a kettle and soak your chia seeds & dates in hot water in separate bowls

  2. Place the dry ingredients into the food processor and pulse until the nuts are in small pieces

  3. When chia seeds form a thick paste, add to the dry mixture and pulse

  4. Add coconut oil and pulse

  5. Drain the dates (reserving the water) and add them to the processor, pulse until combined

  6. Add 1 tbsp of reserved date water until the mixture is fully combined

  7. Roll into 1″ balls and store in the fridge or freezer for optimal snacking at any time ?

FYI: Hemp hearts are a great source of plant protein (25% of their total calories), contain omega 3 fats and have high amounts of vitamin E, phosphorus, potassium, magnesium, calcium, iron and zinc.
