Blueberry Chia Pudding
This Blueberry Chia Pudding is constantly in my breakfast rotation. Whether I am at home or on a night shift, this is the perfect combo of delicious, healthy and super quick to make. I absolutely love blueberries and they are the ultimate superfood for your brain! Check out all of the nutrition benefits below.
1/4 C Unsweet shredded coconut
1 tbsp Slivered almonds
2 tbsp Chia seeds
1 Tbsp Vanilla whey protein powder
1 Tbsp Almond butter
1 C Coconut, almond, or kefir milk
Optional: 1/2 C full-fat Greek yogurt (for extra protein and creaminess)
Toppings:
1/2 C Local Organic Blueberries
Additions: lemon zest, hemp hearts, coconut shreds
Servings: 1 | Time: 5 mins | Equipment: Jar or bowl
Directions:
Mix ingredients in a glass bowl or jar and mix well. Let sit for 15-20mins, or overnight in the fridge.
Add toppings and enjoy!

Blueberries are one of the best foods you can eat for your brain! They have one of the highest concentrations of antioxidants that come from flavonoids, which is a type of polyphenol. Polyphenols are abundant in plants and are excellent for reducing inflammation.
The flavonoids in blueberries have been shown to enhance neuron signalling in the memory centre of the brain and protect against cognitive decline.

Always try to purchase berries locally and organically, as their skin cannot be easily washed. If you cannot find organic, try cleaning with a vegetable was first or buy them frozen.
