Chocolate PB Protein bars

WET INGREDIENTS:

3/4 cup natural PB (sugar and vegetable oil free)
2 tbsp coconut oil
1/2 cup water
optional to add sweetener– 2 tbsp honey, maple, or monk fruit

DRY INGREDIENTS:

1 cup shredded unsweet dried coconut
1 cup almond flour
1/4 cup chia seeds
1/4 cup hemp seeds
1/4 cup chopped pecans
1 cup vanilla protein powder
1 tbsp cinnamon
1 tsp pink salt

CHOCOLATE TOP LAYER:

1 tbsp coconut oil
1/2 bar of dark chocolate (75% or higher)

directions

  1. Combine dry ingredients.

  2. Melt the PB with coconut oil and sweetener if adding.

  3. Combine PB with dry ingredients.

  4. Slowly add water while mixing it together.

  5. Press dough down into the bottom of a lined glass 6x8 Pyrex dish.

  6. Melt the coconut oil with dark chocolate. Pour over bars and sprinkle with flaky sea salt.

  7. Set in the fridge to cool, then cut into bars.
