Paleo Mixed Berry Muffins

Made with Paleo-friendly coconut flower and antioxidant-rich berries. Cut them in half and pop them in the oven under the highest broil setting for 1 minute, then top with butter or nut butter and a sprinkle of cinnamon for ultimate muffin enjoyment.

Wet:

2 large ripe bananas
1/4 C coconut oil melted
1/4 C natural almond butter (or any nut butter)
2 Tbsp maple syrup (optional)
3 pasture-raised eggs
1 C frozen organic mixed berries

Dry:

1/4 C coconut flour
1/4 C ground flax seed
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla bean powder
1 tsp pink salt
1 tsp cinnamon

Servings: 12 | Prep Time: 15 mins | Equipment: muffin tins & liners

Directions:

Preheat oven to 350. Combine the wet ingredients (without berries) with a hand mixer or food processor for easy mixing. Fold in the dry ingredients and berries. Line a muffin tin with non-stick silicone muffin liners. Place batter in cups and bake for 25-30 mins.
