Paleo Power Cookies
These cookies are 10/10. I made them almost weekly in my home. They are an excellent protein-packed, flour-free, sugar-free snack on the go!
They are full of quality ingredients, so I feel confident eating them for breakfast, snacks, or dessert. They are a great treat for kids, too.
Real, simple ingredients.
These cookies are a healthier version of the Whole Foods Power Cookies. Unlike the Whole Foods variety, we changed the ingredients to use paleo-friendly flours, which are more nutrient-dense and less irritating to the gut than wheat flour. We also added high-quality MCT oil instead of highly processed vegetable oils, which are inflammatory and harmful to our brain and immune system. We added extra protein to increase satiety and provide your body with essential amino acids for muscle tissue and immune cell health.
They are the perfect cookie.
WET INGREDIENTS: (mix over low heat in a saucepan to melt nut butter)
1 C unsweet apple sauce
1/4 C MCT oil (or sub. coconut oil)
1/4 C nut butter (I used almond)
1/8 C Molasses
DRY INGREDIENTS:
2 C almond flour
1 C unsweet dried coconut
1 C organic raisins
1 C dark chocolate chips (I used stevia-sweetened chips)
1/2 C ground flax seed
1/2 C raw pumpkin seeds
1/4 C tapioca flour (Optional – added for extra prebiotic fibre for gut health)
1 C vanilla whey protein powder (Grass-fed concentrate)
1/4 C hemp hearts
1/4 C sesame seeds
1 Tbsp cinnamon
1/2 tsp baking soda
1/2 tsp pink salt
Flaky sea salt for garnish (I used Maldon salt)
Servings: 20 cookies | Time: 30 mins | Equipment: oven + baking sheets
DIRECTIONS:
Preheat the oven for 350
Stir the wet ingredients together over low heat, then remove and let cool
Mix all of the dry ingredients into a large bowl and mix well
Once cool (to ensure the chocolate chips don’t melt), add the wet mixture to the dry and stir
Wet your hands and roll the dough into balls, then press them down to flatten
Add flaky sea salt to the top and bake for 18 mins
Store on the counter for 1 week or store in fridge or freezer
