Chocolate Cricket Protein Balls
Dry:
½ C Walnuts or Almonds
1 C Almond Flour
¼ C Coast Vanilla Cricket Protein Powder
2 Tbsp Raw organic cacao powder
1 Tbsp Maca powder (optional)
2 Capsules of good quality probiotics (optional)
1 tsp cinnamon
½ tsp pink salt
2 Tbsp Raw organic cacao nibs (add last)
Wet:
1 Tbsp Chia seeds soaked in 3 tbsp of water
1 Tbsp Virgin coconut oil melted
1 C Dates soaked in hot water
Servings: 20 1″ balls | Time: 15 mins | Equipment: food processor
Directions:
Boil water in a kettle and soak dates and chia seeds. Pulse nuts in a food processor until broken into smaller pieces. Add the dry ingredients and pulse. Slowly add drained dates a few at a time to the dry mixture along with the wet ingredients. Last, add the cacao nibs and pulse once or mix by hand so that the nibs maintain their shape and texture. If the balls are too dry, add a small amount of water and pulse again. Roll into 1” balls and place on baking pan in the fridge or freezer to set. Store in an airtight container for up to 2 weeks in the fridge.
Benefits of Maca root: Maca is a great source of fibre and contains a variety of nutrients such as Vit C, iron, magnesium, potassium, copper, and B6. Recent research has also shown that Maca has several beneficial adaptogenic properties such as balancing hormones, improving fertility, improving symptoms of menopause, decreasing anxiety, improving mood, and increasing energy levels.
