If you love the Whole Foods power cookies as much as I do, you will love this version that is packed full of high-quality ingredients and has the same great taste that you love from Whole Foods. Our version is a healthier recipe full of high-quality fat and protein that you can feel good about eating at any time to fuel your hunger.
Unlike the Whole Foods variety, we changed the ingredients to use paleo-friendly flours which are more nutrient-dense and less irritating to the gut than regular flours or oats. We also added high-quality MCT oil instead of highly processed vegetable oils that are inflammatory and harmful to our brain and immune system. We also added an extra kick of protein to increase satiety and provide your body with essential amino acids for muscle and immune cell health. #cookiegoals
Paleo Power Cookies:
DRY INGREDIENTS:
2 C almond flour
1 C unsweet dried coconut
1 C organic raisins
1 C dark chocolate chips (I used stevia-sweetened chips)
1/2 C ground flax seed
1/2 C raw pumpkin seeds
1/4 C tapioca flour (Optional – added for prebiotic fibre)
1 C vanilla whey protein powder (I use Kaizen Naturals)
1/4 C hemp hearts
1/4 C sesame seeds
1 Tbsp cinnamon
1/2 tsp baking soda
1/2 tsp pink salt
WET INGREDIENTS:
1 C unsweet apple sauce
1/4 C coconut oil or MCT oil
1/4 C nut butter (I used almond)
1/8 C Molasses
Flaky sea salt for garnish (I used Maldon salt)
Servings: 20 cookies | Time: 30 mins | Equipment: oven + baking sheets
DIRECTIONS:
1. Preheat the oven to 350
2. Stir both wet and dry ingredients, then add the wet bowl to the dry bowl and mix to combine well.
3. Add 1/4 C of dough to a baking tray with parchment or baking sheets, and press down on the cookies to make them flat.
4. Garnish with flaky sea salt
5. Bake at 350 for 18-20 mins. Makes 15-20 cookies.
6. Store in the fridge or keep in the freezer for a healthy snack you can pull out anytime.
