No need to skip out on this childhood fav when you can make them out of super clean ingredients like this. Anytime I can sneak extra collagen into my diet is a win!

Recipe adapted from @rachaelsgoodeats
Shortbread Layer:
1 cup Almond flour
3 tbsp Collagen peptides
1/3 cup MCT oil
3 tbsp Monk Fruit Sweetener
4 tbsp warm water
(may sub monk fruit+ water for honey or maple syrup)
Caramel Layer:
1/2 cup Nut butter (I used almond)
1/4 cup Coconut oil
1 tsp Vanilla
1/4 cup Honey or maple syrup
1 tsp Pink Salt
Chocolate Layer:
1/2 Dairy-free 85% or greater dark chocolate bar
1 tbsp Coconut oil
Flakey sea salt
Servings: 16-20 bars | Time: 30 mins | Equipment: oven + glass dish
Directions:
Preheat Oven to 350, mix shortbread ingredients and line a small 6×6 baking dish with parchment. Press the shortbread into the dish and bake for 10-12 mins until golden.
Prepare the caramel layer by heating ingredients in a saucepan on low. Let both the caramel and shortbread cool before pouring caramel over the shortbread and place in the fridge or freezer. (2 hours for the freezer, 4 hours for the fridge)
Make the dark chocolate by placing ingredients in a saucepan on low heat. Once the caramel has completely set, pour the chocolate over and sprinkle with flakey sea salt. Let cool again in the fridge or freezer (15 mins)
Let bars warm to room temp before cutting into bars to prevent chocolate from cracking, and enjoy!
These keep well in both the fridge or freezer!
