Cacao Sea Salt Protein Balls:
1 C Raw almonds
1 C Raw cashews
1 C Pitted dates (about 15) + cover with hot water
1/2 C Egg white powder (bought on amazon)
1/2 C Coconut vegan fermented protein powder (genuine health)
3 Tbsp Raw organic cacao powder
1/4 C Raw cacao nibs
1 Tsp Pink sea salt + garnish
Directions: Boil hot water in a kettle and cover dates. Pulse almonds and cashews in food processor until they are fine ground. Add egg whites, protein, cacao powder, sea salt and pulse until combined. Add nibs last and pulse twice to mix to maintain their texture. Place on low and slowly add dates until mixture turns into a think paste like texture, then slowly add the hot water from the dates until everything is mixed well. You can also mix with your hands if it is too sticky for your processor. Keep your hands slightly moist and roll into 1″ balls and place on baking sheet. Garnish with pink sea salt and place in the fridge or freezer for setting. Store in fridge or freezer in reusable container for convenient superfood eats. Recipe makes ~20 balls and 15 mins to make.
Whats the difference between conventional cocoa powder and raw cacao powder? Confusing right, but they are OH so different. Cacao is raw (non-roasted) ground cacao beans, which are used to make chocolate. Typically when manufacturer’s make conventional chocolate or cocoa powder, they roast the beans at high temps and process them adding refined sugar, sweeteners and/or powdered milk products, as well as other non-food ingredients such as gums, stabilizers, and flavours. Just as I always buy coffee beans organic, I buy cacao organic as well to avoid the beans being sprayed with chemicals.
Why is raw Cacao powder a superfood? Raw organic cacao powder is a nutrient dense powerhouse, full of antioxidants, polyphenols, fibre, magnesium, iron, and healthy fats. 20g (~3tbsps) of raw cacao has 6g fibre, that is 3x more fibre than 100g of oatmeal which is commonly praised for it’s fibre content. If that doesn’t make you wanna make some cacao chia pudding or avocado cacao mousse, I don’t know what will. Drool. So don’t be afraid to add this nutrient dense superfood to your meals throughout the day. I love adding it to smoothies, chia pudding, protein balls, and using it to make raw chocolates + treats.
