Okaaay so the coconut obsession is real, but seriously, who doesn’t love this stuff?! I absolutely love eating a variety of different foods for breakfast otherwise, I just get bored. This is a hassle-free recipe I incorporate into my regular rotation of morning meals, especially because you can keep mixing up the toppings to keep your taste buds guessing.
If you’ve been following my recipes, you know I’m a HUGE fan of FAT&FIBRE for breakfast (and all meals really). Protein is also a great add-in but the first two are non-negotiable for me if I want to start my day feeling my best and energized throughout the day without any crazy blood sugar spikes that leave you feeling fatigued. You can modify this recipe with any yummy ingredients you have on hand. It is fantastic cold or place in the microwave and enjoy warm on cooler days. It’s also a perfect meal or snack for young kids/toddlers. Prepare in a bowl or mason jar at least 30 mins before eating and store up to 1 week in the fridge.
Powerhouse Coconut Chia pudding:
3/4 C water or dairy-free milk
1/4 C Full fat coconut milk or Coconut cream
1/4 C unsweetened coconut shreds
3 Tbsp Chia seeds
1 Tbsp Hemp seeds
1 Tbsp ground flax seeds
1 Tsp Vanilla bean powder
1 Tsp Cinnamon/cardamom/nutmeg (optional)
Toppings: local peaches&apricot, kiwi, toasted coconut, almond slivers & bee pollen (texture heaven)
Directions: mix all ingredients in a bowl or glass jar, ensure all of the chia seeds are covered in liquid. Let rest in the fridge for at least 30 mins. Garnish with fav toppings and enjoy.
Nutrition highlight: Chia seeds have to be one of my absolute favourite health foods. They are a nutrient-dense antioxidant rock star that can be used in so many different ways, especially as a thickening agent as it is for chia pudding. Chia, hemp and flax are all excellent sources of protein, omega3 fats, and fibre, along with a whole host of micronutrients like calcium, magnesium and B vitamins. Get em in ya!
Bee Pollen: is a superfood in its own right, made up of 40% protein that is highly bioavailable for human absorption. It is packed full of vitamins, minerals, fatty acids, enzymes, carotenoids, and bioflavonoids. Because of these, it has natural anti-bacterial/fungal/viral properties that help bulk up your immune system and decreases inflammation, dang! [sce emoji=”bomb”/] Local bee pollen also helps relieve seasonal allergy symptoms as the pollen assists your immune system in adapting to local environmental allergy stimulants.
