Pumpkin Loaf:
1 C Anita’s Organic High Protein Flour
1/2 C Anita’s Organic Almond Flour
1/2 C Ground flax seed
1 C Pureed pumpkin
1 Ripe banana smashed
2 Tbsp Chia Seeds
10 Dates + 1 C hot water
2 Tbsp Molasses
2 Tbsp Pumpkin spice mix (cinnamon, ginger, nutmeg, allspice, cloves)
2 Tbsp Coconut oil melted
1 Tsp Pink Himalayan salt
Topping: pumpkin seeds + Hemp seeds
Directions: Bring water to a boil in a kettle, soak the dates in 1 C of hot water then pulse together in a blender. Add the rest of the ingredients to a mixing bowl and mix well. Slowly add the liquid date mixture to bowl while mixing. Add mixture to a loaf tin lined with parchment paper and top with pumpkin seeds + hemp seeds + a small drizzle of coconut oil.
Preheat oven for 350° F and bake on middle rack for 35 mins. Store in airtight container in the fridge for 1 week or slice and place in freezer for easy toasting.
