Avocados are my go-to breaky item most days, they are nutrient dense loaded with fibre and micronutrients like potassium, B vitamins, omega 3’s, beta-carotene and are so darn yummy! Whether you are eating breakfast at home or on the go, in the morning or in the afternoon, a plate filled with multicoloured fruits and veggies are going to fill your belly with prebiotic fibre and high-quality nutrients. This is brain happy and gut happy food that won’t spike your blood sugar and cause you to crave sugar later in the day. If you are eating on the go, simply soft-boil eggs the night before and add to reusable Tupperware in the am. Storage tips: I typically buy 5-7 avocados at a time when shopping. I stick 2 on the counter for eating and the rest in the fridge to slow ripening. Then simply take them out of the fridge as needed and enjoy in perfect ripeness. If you do have extra avos that are going bad or don’t have time to eat, peel them and put them in the freezer to add to smoothies another day. No waste here!
