This Blueberry Chia Pudding is constantly in my breakfast rotation. Whether I am at home or on a night shift, this is the perfect combo of delicious, healthy and super quick to make. I absolutely love blueberries and they are the ultimate superfood for your brain! Check out all of the nutrition benefits below.
Blueberry Chia Pudding:
1/2 C Local Organic Blueberries
1/4 C Unsweet shredded coconut
1 tbsp Slivered almonds
2 tbsp Chia seeds
1 tbsp Almond butter
1 C Coconut/almond milk
Directions: Cover with coconut/almond milk and mix well. Let it sit for 15-30mins until thicken or throw in your lunch bag to eat later.
Blueberries are one of the best foods you can eat for your brain! They have one of the highest concentrations antioxidants that come from flavonoids, which is a type of polyphenol. Polyphenols are abundant in plants and are excellent for maintaining brain health. The flavanoid in blueberries has been shown to enhance signalling in parts of the brain that handles memory and protects the brain against cognitive loss #braingoals! Take advantage while they are in season and freeze to enjoy all year long.
Other berries have these beneficial polyphenols as well and provide a variety of other micronutrients so feel free to mix em up! ie raspberries/blackberries/ strawberries etc.
*Try to purchase organic berries: pesticides sprayed on berries are difficult to wash off due to their porous skin. Buying produce organic not only protects yourself from damaging chemicals but also prevents toxic runoff into our soil and water systems.
